What Mala says:
I was brought up with a love of delicious home-made Indian food, from a region in India known as Gujarat. People from Gujarat are known as Gujaratis and it is often said that Gujaratis have perhaps, truly perfected the art of vegetarian cooking.
I introduced many of our friends to this type of food when we had dinner parties, and they were amazed at how much better the food tastes and how healthy it is compared to Indian restaurant food. I have carried out demonstrations to fellow mums who then went on to hold their own dinner parties using my recipes, and the overwhelming response they received from their friends has been very positive.
My passion for food and health is so great that I studied a degree in Nutrition and Dietetics, so I am a Nutritionist and Dietitian, currently practising both privately and within the NHS.
I will share with you my enjoyment of creating wonderful simple dishes that are Indian (Gujarati) vegetarian, vegetarian or free from wheat or dairy. I can also expertly tailor the menu so it is suitable for people who wish to or must follow a specialized diet - just let me know when booking the session. These group cookery lessons last approximately 4 hours and are not demonstrations but a hands-on class where you do the work with my guidance. I truly believe that anyone can cook. I offer:
- an Indian vegetarian cookery day
- a vegetarian cookery day
- a cookery day for specialized diets
The Indian vegetarian cookery day is when you will make 5 authentic Indian dishes based on your favourite foods.(options sample menu 1) Once you learn the basics of making a curry, you can use these principles to make an endless number of curries using ingredients you have available to you. You can make your dishes mild or spicy depending on your taste. Your children too will love Indian food once you have been on this course. I can offer tips on how best to store garlic/ginger/chillies in the freezer and tips on shopping for spices and other Asian ingredients.
The vegetarian cookery day is excellent for those who have vegetarian family members or friends and want to cook simple quick nutritionally balanced meals or want to make something different to impress them. I know from experience that many meat eaters prefer vegetarian options, so learning to cook the vegetarian way will be great for everyone you know. The day will be tailored to suit your needs. Typically, we will make upto 5 main dishes.
The specialized diet vegetarian/vegan cookery days are tailored to perhaps high fibre or low fat for heart problems, weight reducing or free from gluten, dairy or other ingredients that cause intolerance or allergy. Note that I do cook occasionally with nuts. Please discuss with me prior to booking if you are not able to tolerate them.
At the end of the session, you will be able to take away some food (perhaps enough for two people) back to your own home to share with your friends/ family.
